Banana BreadI think this is the EASIEST no-fail Banana Bread recipe known to mankind. And it's delicious. No fancy, complicated Banana Bread recipe beats this one. Everything goes into your mixer bowl so cleaning up is quick. No mixer? Just grab a good sized mixing bowl and a wooden spoon. Yup, it's that simple!
Preheat your oven to 350 degrees Fahrenheit. Add all of the following WET ingredients into your mixer or bowl. 270 grams (or 1.5 cups) over ripe Bananas (about 4 medium mashed bananas) 78 grams (1/3 cup) MELTED butter, unsalted or salted, melted a pinch of salt (max of 1/2 teaspoon) 1 large Egg 150 grams (3/4 cup, packed) Brown Sugar 1 teaspoon of Princess Emulsion (or Vanilla extract) Mix these wet ingredients for a minute or so until they are all combined (the bananas will leave residual lumps which is a good thing). Add the final two DRY ingredients to your mixer bowl. 1/2 teaspoon baking soda (not baking powder) 205 grams (1.5 cups) of All-Purpose Flour Mix for about one minute or until all ingredients are combined (it's okay if there are some lumps, but there shouldn't be any dry clumps or areas) Spray a smaller loaf pan (I use one that's about 9" long and about 4" wide) with non-stick baking spray (that's a non-stick spray with flour in the mix -- very cool). No non-stick baking spray? Just butter or spray with any non-stick spray and coat with flour (dump the extra flour out). Bake 350 degrees about 55 minutes until tooth pick. or CLEAN knife comes clean. Wet looking is okay but there shouldn't be any 'batter' showing up on your test knife. Cool in the loaf pan for about 5 minutes then remove from pan and cool on a baking rack. Now be patient. Let it cool before you cut into it or it'll likely break apart. With this recipe, waiting is the hardest part. Delicious toasted, then slathered in salted butter. Or a cold slice with fresh salted butter. Or just by itself, as a midnight snack you sneak. Makes one 9" loaf. |
