Healthy White Chicken Chili
2 cans of white beans (or soak a bag overnight and rinse), drained
1.5 pounds of chicken breast (if you like it lean, otherwise use dark meat), diced
1 can of reduced fat cream of chicken soup
1 can of diced green chilis (mild or hot, however you like them)
1 package of chili seasoning mix (or you can add chili powder, cumin, etc.)
1 can of chicken stock
Mix everything together in a crockpot and cook all day (or on high for a few hours).
The directions say to stir in nonfat sour cream (1/2 cup) to the chili to make it creamier but we just added to our individual bowls with some chopped avocado and green onions.
Calories per Serving: 234 calories (entire crockpot serves eight).
