CHINESE OVEN-BARBECUED SPARERIBS
These are classic Chinese Restaurant spareribs. Ask your butcher to cut pork spare ribs into 2 inch pieces.
2 cloves garlic, crushed 3 TBS dark soy sauce 2 TBS dry sherry 1 tsp. grated fresh ginger ½ TBS brown sugar ½ TBS sesame oil ½ tsp. five spice powder 1 TBS hoisin sauce shot of Tobasco or to taste 1 TBS catsup 2-3 pounds pork spareribs Mix well and marinate the pork spareribs for 2 hours in the refrigerator. Place on a roasting rack in a 350-degree oven for 1 hour. Turn temperature up to 400 degrees, and roast for an additional 15 minutes or until browned and tender. It is a good idea to place a baking pan containing about 1-inch water in the oven beneath these ribs as they cook; it will prevent the sauce from dipping on the floor of the oven and causing smoke.
