Nut Goody BarsThis recipes comes from sister Robin's mother-in-law Myrdena who lives in eastern Washington. These are a delicious family favorite that makes it to every function and disappears in a flash. Yummy!
LAYER 1: 1 (12 ounce) pkg butterscotch chips 1 (12 ounce) pkg semi-sweet chocolate chips 2 cups peanut butter Melt chips over hot water or in microwave. Add peanut butter. Spread HALF of this mixture in a 12"x 16" buttered bar pan (reserving other half for Layer 3). Place in freezer until set. LAYER 2: 2 sticks butter (or margarine) 1/4 cup dry vanilla pudding mix 1/2 cup evaporated milk 1 tsp. maple extract 2 pounds powdered sugar Combine first four ingredients and bring to a gentle boil. Stir in two pounds powdered sugar. Spread over first (frozen) layer. chill to set. LAYER 3: 1 pound Spanish peanuts Add the peanuts to remaining chocolate mixture. Mix until peanuts are well coated. Spread over second layer. Chill. Cut into 1" square bars. These bars are too soft at room temperature. Keep frozen or refrigerated. They freeze very well. |
