Oatmeal Coconut Crispies
Preheat oven 400. Mix margarine, sugars, eggs, and vanilla until fluffy. Blend flour, soda, and salt thoroughly; stir into shortening mixture. Blend in rolled oats and coconut. Shape dough in 1 ½ inch balls and place on lightly greased baking sheet. Press lightly with floured bottom of drinking glass to flatten. Bake 10-12 minutes, or until lightly browned. Cool on wire rack. |
