How to use your Mix to make 
Fluffy Pancakes in a jiffy!

Mix together: 
1 cup of your mix
1 egg (mixed)
1 cup of Buttermilk (Milk is okay)

Stir to Combine (lumps are ok) 
Cook in 1/4" measures on a 375 F Griddle. 
Enjoy!  

Robin's Easy Fluffy Pancake Mix (better than store mix!)

If you make this pancake mix, you'll never buy pancake mix from the store again. Once you mix this up, all you need to do to make pancakes is whisk together one egg + one cup buttermilk (or milk) + one cup of this mix. That's it! Fluffy magical pancakes. You'll never yearn for iHop again!

Recipe Yield: 8 servings

Pancake MIX Ingredients:
  • 3 TABLEspoons Baking POWDER (check the expiration date on the label!)
  • 2 TEApoons Baking SODA (check the expiration date on the label!)
  • 1 TEAspoon Sea Salt (regular salt will also work) 
  • 6 cups All Purpose Flour (720 grams on your kitchen sale; tare for the bowl!)
  • 1/4 cup Sugar

Turn your Homemade MIX into Pancakes QUICK! 
  1. In a small bowl, whisk together your wet ingredients:
    1 egg + 1 cup of buttermilk
  2. Add 1 cup of Robin's Fluffy Pancake Mix.
  3. Stir together (it's normal if it's a bit lumpy, but no dry 'pockets' please). 
  4. Let set for a couple of minutes. You'll see it start to come to live (think yeast on top of a great microbrew).
  5. Using a 1/4 cup measuring cup (or use your eye if you're good at estimating), pour the batter onto a 375 degree griddle, Leave them undisturbed until you see bubbles on the top. Flip them gently. Let cook until golden brown on the second side, and voila. You have made fluffy pancakes from your own homemade pancake mix! Well done! Now eat. :)
