Skinny Mounds Oatmeal
This recipe comes from Robin in Texas -- she's got a sweet tooth and there is no combination of chocolate and coconut that she hasn't fallen in love with. This is a skinny version of a coconutty chocolaty Mounds oatmeal that tastes like a dark chocolate pudding with oatmeal. If you like coconut and dark chocolate, you'll love this sweet breakfast that tastes more like dessert!
In a large Pyrex bowl, add 40 grams old fashioned dry oats, 1/4 teaspoon salt (if desired), coconut (sugar free) espresso syrup, extract, and Silk. Microwave on 60% power for several minutes (my microwave takes about six minutes), stirring occasionally. The mix will be runny at first, but then toward the end, the oatmeal will soften and the chocolately liquid will turn into what looks like dark hot fudge. When it's done, place in a serving dish and top with the coconut and the drizzle of the zero calorie chocolate syrup. Yumm!!!
