Once you have one of these Pyrex 2 quart measuring cups, you will use it to mix up everything!

Triple Chocolate Brownies

Sister Kathy finally found a recipe that comes out better than a brownie mix!  This recipe results in brownies that are thick & moist & chewy. Quite possibly the BEST brownie you've ever baked!
  • 1 stick + 3 tablespoons butter
  • 1 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 3/4 cup unsweetened cocoa powder
  • 2 eggs
  • 1/2 cup flour
  • 1/8 teaspoon baking soda
  • 1 tablespoon corn starch
  • 1/4 teaspoon salt
  • 1/4 cup semi-sweet baking bar, chopped
  • 1/2 cup semi-sweet  chocolate chips
 
  1. Preheat oven to 325 degrees Fahrenheit. Spray a 8" x 8" inch pan with non-stick cooking spray and set aside.
  2. In a microwave safe bowl, add the butter and sugar and heat on high for 1 minute and 15 seconds. Remove, stir, then add vanilla extract and cocoa powder.
  3. By hand, mix in eggs one at a time, just till incorporated.
  4. Using a sifter, add dry ingredients (just sift directly into the chocolate mixture). Stir ONLY until no flour remains unincorporated. Fold in the chopped chocolate and chips.
  5. Spread the brownie batter evenly into the prepared pan (it will be thick). 
  6. Bake for 20-30 minutes until brownies are set. We test with a toothpick (it shouldn't come out with batter stuck to it). If the toothpick comes out clean (pretty clean is okay if you're good with brownies that are extra moist), they're done! 
  7. Remove from oven and allow to cool for 30-45 minutes before cutting. 
  8. Enjoy the best brownie you have ever had!

NOTES:  This recipe doubles well to fit a 9" x 13" pan.
