Once you have one of these Pyrex 2 quart measuring cups, you will use it to mix up everything!

Triple Chocolate Brownies

Sister Kathy finally found a recipe that comes out better than a brownie mix!  This recipe results in brownies that are thick & moist & chewy & the best brownie she has ever had
  • 1 stick + 3 tablespoons butter
  • 1 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 3/4 cup unsweetened cocoa powder
  • 2 eggs
  • 1/2 cup flour
  • 1/8 teaspoon baking soda
  • 1 tablespoon corn starch
  • 1/4 teaspoon salt
  • 1/4 cup semi-sweet baking bar, chopped
  • 1/2 cup semi-sweet  chocolate chips
 
  1. Preheat oven to 325 degrees.  Spray a 8x8 inch pan with non-stick cooking spray.
  2. In a microwave safe bowl, add the butter and sugar and heat on high for 1 minute and 15 seconds.  Remove, stir, then add vanilla extract and cocoa powder.
  3. By hand, mix in eggs one at a time, just till incorporated.
  4. In a sifter add dry ingredients, then sift into chocolate mixture.  Mix till no flour remains unincorporated.  Fold in the chopped chocolate and chips.
  5. Spread the brownie batter evenly into the prepared pan (it will be thick)
  6. Bake for 20-30 minutes until brownies are set - I tested with toothpick.  
  7. Remove from oven and allow to cool for 30-45 minutes before cutting. 
  8. Enjoy the best brownie you have ever had!

NOTES:  This recipe doubles well to fit a 9x13 pan.  I recommend a metal pan for these brownies, not a glass dish.
