Turtles

This recipe makes an amazing candy treat.  Mom used to sometimes stop at a candy shop when we were out shopping and buy ONE turtle candy for each of us.  I used dark chocolate here, which makes this candy ALMOST medicinal.  And, if you can, make the caramels yourself; it makes the turtles 10 times better!  This makes 24 candies, but you can make any number you want--just lay out the pecans and go!

  • 48 Pecan halves (maybe picked on the trees at Robin's ranch)
  • 24 caramel candies (homemade or wrapped cubes)
  • 1 cup chocolate chips or bar melted-use milk chocolate or dark chocolate

Make the Turtle
  1. Place two pecans next to each other on a parchment covered baking sheet.
  2. Place one  flattened caramel piece on top. 
  3. Put in oven and bake at 325 degrees  for 5 minutes--just  until softened.
  4.  Remove from oven and allow to cool.
Make a Base for the Turtle
  1. Spoon a teaspoonful of melted chocolate  onto another sheet of parchment paper, creating a small chocolate base. 
  2.  Place the "turtle" on top of the chocolate.
​Drizzle the Turtle to Finish
  1.  Put remaining melted chocolate in a plastic sandwich bag, snip one corner with scissors to make a tiny hole, and pipe  chocolate on top.
  2. Sprinkle with sea salt.
