Homemade Maple Syrup

You're on a roll making homemade pancakes. Why not make some of your own maple syrup. We three sisters grew up with this magical combination of pancakes & syrup made from scratch. Whether you're feeling industrious or simply ran out of maple syrup, this is a great recipe to have on hand.  It's simple, fast, and delicious and you'll wonder why you never made your own pancake syrup before now! Makes 2 cups. 


Ingredients: 
  • 1 cup water1 cup white sugar
  • 1 cup brown sugar
  • 1 tablespoon maple flavored extract

Directions:
  1. Bring the water, white sugar, and brown sugar to a boil in a saucepan over medium-high heat. Reduce heat to medium-low, and stir in the maple extract; simmer 3 minutes longer.

Christine Elaine's Pancake Mix

If you make this pancake mix, you'll never buy pancake mix from the store again. Consider making this in a large (multiplied) batch for future use as your family will request these pancakes again and again!

Recipe Yield: 8 servings

Ingredients
  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 1/4 cups milk (warm to room temperature)
  • 1 egg (room temperature)
  • 3 tablespoons butter, melted (I add it to the warmed milk so it melts in there)


Directions
  1. In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
  2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
