Pumpkin Chocolate Chip Muffins
4 eggs 3 cups flour 2 cups sugar 1 cup canola oil 2 tsp baking soda ½ tsp salt 1 small can pumpkin, 15 oz. 1 package mini chocolate chips (12 oz) Heat oven to 350. Beat eggs and sugar. Mix in rest of the ingredients. Spray muffin pans with non-stick cooking spray. Fill each section ¾ cull. Bake in pre heated oven approximately 20 minutes or until lightly browned. Makes about 24 medium muffins. These also make up well as miniature muffins - bake 8-10 minutes or until just done. |
