Carrot Cake

This recipe came from a co-worker of Kathy's in Fairbanks Alaska in the late 1970's.   It is dense and moist - frost with cream cheese frosting.

• 3 cups flour
  
• 2 cups sugar
  
• 2 tsp. soda
  
• 1 tsp. salt
  
• 1 tsp. cinnamon
  
• 1 tsp. nutmeg
  
• 1 ¼ cup oil
  
• 1 cup crushed pineapple
  
• 3 eggs
  
• 2 cups grated carrots
  
• 1 cup pecans
  

Preheat oven 325.  Combine all ingredients and mix well.  Pour into well-greased 9x13 sized pan.  Bake 1 hour.  Frost with cream cheese frosting.
