Red Velvet Cookies    

These little gems are really more like "muffin tops" in that they are not chewy or flat, but are very cake-like in texture.

Ingredients:
  • 1 stick of butter (softened)
  • 1 cup of applesauce (if you want a chewier cookie, replace the applesauce with two sticks ... yes, one cup of butter)
  • 1/3 cup of sugar
  • two large eggs
  • one Red Velvet cake mix (boxed)
  • 1/4 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 cup all-purpose flour
Instructions:
  1. Cream together the wet ingredients (butter, applesauce, eggs), and sugar.
  2. To this wet mixture stir in the dry ingredients (sifted together before adding to wet mixture).
  3. Refrigerate batter for an hour or overnight.
  4. Preheat oven to 375 degrees.
  5. Spray cookie sheet with Baker's Joy (spray oil with flour).
  6. Drop by spoonfuls onto sheet and bake, one sheet at a time. NOTE: If you cook two sheets at a time, as you often do with traditional cookies, the opening of the door will let enough heat out that the first batch of cookies will fall and spread too much.
  7. Cook approximately ten minutes or until set (they will be puffy and cake like).
  8. Cool on baking sheet one minute and then remove to cooling grid.
  9. Cool completely and decorate with either frosting or white chocolate drizzle. Also very good with white chocolate chips added to the batter.
