Chicken A'La KingThis recipe comes from the Betty Crocker New Picture Cookbook circa 1961. Sister Kathy says this is a great recipe for left-over chicken. My family does not like green peppers so I don’t use them – tastes just great with pimento and mushrooms.
INGREDIENTS: 1/3 cup mushrooms (or 2 oz can) ¼ cup chopped green pepper ¼ cup butter ¼ cup flour ½ tsp salt 1/8 tsp. pepper 1 cup chicken broth 1 cup cream or Half and half 1 cup cooked chicken ¼ cup chopped pimento Instructions Sauté mushrooms and green pepper in butter. Blend in flour and seasonings. Cook over low heat, stirring until mixture is smooth, bubbly. Remove from heat. Slowly stir in broth and cream. Bring to boil over low heat, stirring constantly. Boil 1 min. Add chicken and pimento. Continue cooking until meat is heated through. Serve in hot pastry shells, in crepes, over biscuits, over toast, over rice, or pasta. |
