Chili Con Queso Dip

This recipe was shared by a co-worker in Fairbanks Alaska - circa 1980.

• 1 chopped medium onion
• 1 or 2 small can green chilies- chopped
• 1 can diced tomatoes w/green chilies
• 2-3 TBS butter
• 1 ½ Lb Velveeta cheese

Sauté onions in butter until glazed.  Add tomatoes & green chilies.  Simmer until onions are tender about 10 to 15 minutes.  Add cheese and stir until smooth.  Serve warm as it sets up  hard as it cools.
