Cinnamon Swirl Bundt Coffee Cake

Kathy adapted this recipe from one found on allrecipies.com.  When taken to an event, everyone asks for the recipe!
  • ​​3/4 cup butter, room temperature
  • 1 ½ cups white sugar
  • 3 eggs
  • 1 tsp vanilla
  • 1 cup nonfat Greek yogurt
  • 2 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 cup chopped walnuts
  • 1 TBS ground cinnamon
  • ¼ cup brown sugar
  • 2 TBS white sugar
Directions
  1. Preheat oven to 350 degrees.  Grease a 10-inch Bundt pan.
  2. Bet butter and sugar with an electric mixer in a large bowl until light and fluffy.  Add eggs one at a time, allowing each to blend into the butter mixture before adding the next.  Mix in vanilla.
  3. Combine flour, baking soda, and baking powder.  Pour flour mixture into batter alternately with the sour cream, mixing until just incorporated.  Fold in walnuts, mixing just enough to evenly combine.  Pour half the batter into the prepared pan.
  4. Mix the remaining ¼ cup brown sugar, white sugar and cinnamon.
  5. Sprinkle cinnamon sugar over the batter in the pan.  Drop remaining cake batter in heaping spoonful’s over filling, covering it as best you can.  Swirl filling with knife then smooth top.
  6. Bake for 50 minutes, or until a tester comes out clean.
