Sourdough Pancakes
Sister Chris makes these when we visit Alaska, if you have never tried them it's worth making sourdough for. These pancakes are so light and fluffy you can eat a pile of them. Enjoy! Directions 2 cups all-purpose flour 2 cups lukewarm water ½ cup sourdough starter 2 tablespoons sugar 1 teaspoon salt ½ teaspoon baking powder 3 tablespoons melted butter or oil 2 eggs ½ teaspoon baking soda dissolved in 1 tablespoon of water Add flour and water to sourdough starter. Beat until smooth and let stand in a warm place overnight. Reserve ½ cup sourdough starter and put back into refrigerator in a covered glass or plastic container. To the remaining batter add sugar, salt, baking powder and melted butter or oil. Beat in eggs. Gently fold in dissolved baking soda. Do not stir after the baking soda has been added. Cook on moderately hot, greased griddle. Do not let the oil smoke on the griddle. Note: To make blueberry pancakes add 1 cup blueberries. To make buckwheat pancakes, replace 1 cup of flour with buckwheat flour. Makes 4-6 servings |
