Strawberry Melon Spinach Salad with Orange Honey Dressing

This recipe comes from sister Robin where this salad is a favorite on hot Texas summer days. The melon contributes a cool, fresh element to the salad while the dressing, especially when made from fresh picked oranges and local honey, combine to bring a light, refreshing flavor to lunch poolside on a hot, sunny day. 


SALAD:
12 cups baby spinach (cleaned)
2 cups sliced strawberries
2 cups cubed canteloupe
1/4 cup slivered almonds

ORANGE HONEY DRESSING:
1/4 cup Orange Juice
1/4 cup Honey
2 T Olive Oil (or vegetable oil)
2 t Dijon Mustard

Direction: 
1.  Make Orange Honey Dressing
2.  Toss Dressing and Salad and serve immediately.
