Robin's Tres Leches Cake

This Tres Leches (three milks) recipe produces a sweet, VERY moist cake soaked with a three milk mixture. This recipe is Gabriel's favorite and he swears it's even better than his favorite Tres Leches cake at Chuy's. He ought to know! Make it the day before you plan to serve it; soaking overnight is the magical trick to this delicious cake.

Ingredients for Cake
  • 1 package white cake mix
  • 1 1⁄2 cups flour
  • 5 eggs
  • 1 cup sugar
  • 2⁄3 cup cooking oil
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • 1 cup milk

Filling (Milk that you pour over cake to soak in) NOTE: I double this section of the recipe and use almost all of it. If you use just a single batch (as described below) the cake will not be as moist -- so proceed according to your preference). 
  • 1 (12 ounce) can evaporated milk
  • 1 (14 ounce) can sweetened condensed milk (NOT evaporated milk)
  • 2 cups of half and half

Frosting
  • 1 large container of Cool )Whip (or two small containers for a thicker layer of "frosting"

DIRECTIONS
  1. Preheat oven to 350 F and spray a 13 x 9" cake pan with Baker's Joy spray (or grease and flour). 
  2. Mix cake ingredients together (just until combined) and pour into prepared cake pan.
  3. Bake for 45-50 minutes until knife inserted in middle comes out clean. Watch cake as time varies.
  4. Allow to cool completely. 
  5. While the cake is baking, mix filling (three milks) ingredients together.
  6. When cake is cool, poke holes in it with a skewer and slowly pour milk mixture over the cake continuing to poke holes as needed. You want the cake to be completely flooded.  
  7. Let sit overnight in the refrigerator. 
  8. If the cake will take more liquid, add remaining milk mixture and discard the remainder. Don't add so much that the top is covered with liquid (if that happens, the Cool Whip "frosting" won't stick). 
  9. When the milk has disappeared from the top, "frost" with Cool Whip. 
  10. Serve and enjoy!
