Enchilada's

This is how my daughter Jen makes her enchilada's and they have always been my favorite!  Enchilada's are a great way to use left over meat, these featured in the photo are made from left over pot roast beef.

• Corn tortillas (yellow or white)
• Cooked beef, pork, chicken or seafood
• Grated Cheddar Cheese, or Mexican blend
• Cilantro 1/3 a bunch

​​Directions

1. Make Enchilada sauce recipe.
2. Chop meat, and cilantro add to mixing bowl.  
3. To the mixing bowl add grated cheese in amount equal to chopped meat.
4. Warm tortillas in microwave 30 seconds (3 at a time)
5. Fill with meat/cheese/cilantro mixture and roll up, place in baking pan.
6. Bake in 350 degrees oven for 10 minutes until cheese is melted, then top with enchilada sauce and sprinkle with additional cheese.  Continue to bake for 10-15 minutes until sauce is bubbling.
